Spicy Italian Sausage and Peppers Sandwich
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Tablespoon Unsalted Butter
- 1 whole Large Onion, Thinly Sliced
- 4 whole Spicy Italian Sausage Links, Cut Into 4 Inch Slices (Johnsonville, Hillshire Farm Or Other Brands)
- 1 whole Green Bell Pepper, Core And Seeds Removed, Thinly Sliced
- 1 whole Red Bell Pepper, Core And Seeds Removed, Thinly Sliced
- 1/4 cups White Wine (optional)
- 1 whole French Baguette (or Other Type Of Baguette Or Focaccia Is Also Fine)
- Salt And Pepper, to taste
- Preheat oven to 350 F.
- In a large pan over high heat, add the oil, butter and onions and cook for 3-4 minutes, until onions are translucent.
- Add the sausages and cook for 2 minutes.
- Add the peppers and cook for 2 minutes.
- Then add wine (if using) and cook for another 5-7 minutes, until peppers are soft and caramelized.
- If you are not using wine, do the same thing but lower the heat to medium and add 2-3 tablespoons of water or stock.
- While the sausages and peppers are cooking, slice the baguette in half lengthwise, then into 4 equal sandwich-size pieces (to make 4 sandwiches).
- Lay them on a sheet tray and toast in the oven for about 5-7 minutes, until they are a little golden and crispy on the outside but still soft on the inside.
- When the sausages and peppers are fully cooked and caramelized, turn the heat off and season with salt and pepper.
- Make your sandwiches by topping the bread with the onion and sausage mixture and serve immediately.
