Mango Peach Chutney Recipe
- 3 pound peaches (weight after skinning, removing seeds), minced
- 2 lg. mangos (about 1 1/2 pound prepared fruit), minced
- 1 lg. green pepper, minced
- 2 lg. onions, minced
- 2 jalapeno chilies, seeded & minced fine
- 4 lg. garlic cloves, minced
- 1/2 c. fresh ginger, peeled & minced fine
- 1 teaspoon red pepper flakes
- 3 1/2 c. brown sugar
- 2 1/2 c. cider vinegar
- 1 1/2 c. raisins
- Mix all ingredients together in a large kettle (one which does not react with vinegar), bring to a boil and boil very slowly about 3 hrs, stirring frequently and watching closely to prevent burning.
- Put boiling warm into freshly sterilized warm jars, sealing with paraffin if they are not canning jars.
