Chilled Cucumber Soup with Avocado, Cumin, and Mint

  1. Halve the cucumbers lengthwise and scoop out and discard the seeds.
  2. Place the cucumbers in a blender.
  3. Slice open the avocado.
  4. Stick a chefs knife into the pit and twist to remove.
  5. Scoop the avocado flesh into the blender.
  6. Add the almonds, lime juice, cumin, jalapeno, scallion, and mint.
  7. Blend with the ice cubes and 2 cups cold water until smooth.
  8. Taste and season with salt.
  9. Serve in glasses garnished with a few chopped almonds.
