Peasant Soup

  1. Place beans in a large stock pot and cover with water.
  2. Bring to a boil and boil for 2 minutes.
  3. Remove from heat; cover and let stand for 1 hour.
  4. Drain and rinse beans; return to stock pot.
  5. Add all remaining ingredients except olive oil.
  6. Bring to a boil; reduce heat, cover and simmer for 1 1/2 hours or until beans are tender.
  7. Remove and discard bay leaves.
  8. Add olive oil and heat through.
