Cinnamon Streusel Cake
- 2 1/3 c. multi-bran Chex cereal, crushed to 1 c. and divided
- 1 c. all-purpose flour
- 1/2 c. + 1 Tbsp. sugar, divided
- 1 tsp. baking powder
- 1 c. skim milk
- 1/3 c. vegetable oil
- 1 egg, beaten
- 1/2 tsp. vanilla
- 1 tsp. cinnamon
- applesauce (optional)
- Preheat oven to 350u0b0.
- Coat 8-inch square or round pan with no-stick cooking spray.
- In large bowl, combine 2/3 cup cereal, flour, 1/2 cup sugar and baking powder; add 1/4 teaspoon salt if desired.
- Set aside.
- In small bowl, combine milk, oil, egg and vanilla; add to reserved cereal mixture all at once.
- Stir until combined.
- Pour into prepared pan; set aside.
- In small bowl, combine remaining 1/3 cup cereal, remaining 1 tablespoon sugar and cinnamon.
- Sprinkle over reserved cake batter; cut through batter with knife to swirl.
- Bake 30 to 35 minutes or until tests done. Serve with warm applesauce if desired.
- Makes 9 servings.
