Two Crust Banana And Rum Pie Recipe
- Pastry for 2-crust 9-inch pie
- 6 to 8 fully ripe bananas, cut in half, then halved lengthwise
- 3/4 c. sugar
- 1 teaspoon nutmeg
- 2 tbsp. light rum
- 1 tbsp. butter
- 1 tbsp. evaporated lowfat milk
- Line pie pan with pastry, then arrange bananas in pan.
- Mix sugar and nutmeg and pour over bananas.
- Sprinkle with rum and dot with butter.
- Top with pastry, slit in a few places and brush with evaporated lowfat milk.
- Bake in very warm 450 degree oven for 15 min, then reduce heat to 350 degrees and bake 15 min.
- Serve hot or possibly cold.
