Black Bean And Sausage Posole Recipe
- 12 ounce Grnd turkey sausage
- 1 can Reduced-sodium chicken broth, (14.5 ounce.)
- 1 can Black beans, (15 ounce.) rinsed and liquid removed
- 1 can Golden brown hominy, (14.5 oz) rinsed and liquid removed
- 1 can Mexican-style stewed tomatoes, (14.5 oz) NOT liquid removed
- 1 c. Frzn loose-pack diced hash browns
- 1/2 c. Sweet green peppers, minced
- 1/3 c. Onion, minced
- 1 x Clove garlic, chopped
- 1/2 tsp Chili pwdr
- 1 tsp Dry oregano, crushed
- In large saucepan, brown sausage.
- Add in green pepper, onion, garlic and cook till tender.
- Stir in broth, black beans, hominy, tomatoes, potatoes, chili pwdr and oregano.
- Bring to boiling; reduce heat.
- Cover and simmer 30 min.
- Serves 6.
- NOTES : Made 11-6-97.
- Added 1/2 teaspoon more chili pwdr and 1 green chili, minced.
- Used Jimmy Dean pork sausage.
