Cheese Ravioli Asparagus Pie(Casserole)
- 2 large eggs
- 1 can condensed asparagus soup
- 1/4 tsp. pepper
- 1 pkg. frozen ravioli, cooked
- 1 c. chopped zucchini
- 2 large plum tomatoes, peeled, seeded and chopped (1 c.)
- 2 Tbsp. chopped, fresh basil or 2 tsp. dried
- 1 1/2 c. shredded Mozzarella cheese
- Heat oven to 325u0b0.
- Grease a 9-inch pie pan.
- In a bowl, slightly beat eggs; stir in soup and pepper.
- Put ravioli in bottom of pan in a single layer, then spoon 1/2 of the mixture over them.
- Top with 1/2 of zucchini, tomatoes, basil and Mozzarella.
- Repeat layers, then top with remaining 1/2 soup mixture, then another layer of tomatoes, zucchini, basil and Mozzarella.
- Bake 45 minutes or until set in center and brown on top.
- Let stand 15 minutes before serving.
