Homemade Vegetable Soup
- 1 lb. pkg. fatty beef cubes
- 5 beef bouillon cubes
- 1 large can tomato juice
- 1 large can whole tomatoes, cut up
- 3 to 4 medium potatoes, cut up
- 2 medium onions, cut up
- 2 celery stalks, cut up
- 2 large carrots, cut up
- 1 box frozen peas
- 1 box frozen baby lima beans
- 1 can green beans
- 1 can corn
- 1 can Great Northern beans
- In a very large pot, add beef and beef cubes to one half pot of water.
- Cook for 1 1/2 to 2 hours, until meat is tender.
- Add water as needed.
- When meat is tender, add onions, celery, carrots and tomatoes.
- Cook 1 hour.
- Add water, if needed.
- After 1 hour, add tomato juice, potatoes and rest of vegetables.
- Add salt and pepper.
- Cook until done.
- Feeds a large family.
