Beefy Rice & Veggies
- 2 cups white minute rice
- 1 pound ground beef
- 1-2 cups mixed frozen veggies
- 1/4 tsp garlic powder
- to taste salt & pepper
- dash chopped onion
- 1 cup water
- 4 tbsp butter or margarine
- Cook rice as directed.
- Set aside.
- Brown beef in a large skillet or wok.
- Season with garlic, salt, and pepper to taste.
- Drain any leftover grease.
- Add frozen veggies, onion, and 1 cup of water to skillet.
- Boil on high until water boils away.
- Stir frequently.
- (If using leftover cooked veggies, simply add to skillet and skip the water.)
- Turn off heat.
- Add butter and rice to skillet.
- Stir until butter is melted.
- Remove from heat and enjoy!
