Sig/*ari* Roasted butternut squash filled with garlic mushrooms ,tomato and melted Manchego cheese
- 1 butternut squash,halved
- 6 brown cap mushrooms chopped
- 1 tomato finely chopped
- 1/2 clove of garlic crushed
- 1 shallot finely chopped
- 1 chunk Manchego Sheep cheese
- 1 pinch each salt and pepper
- 2 tbsp butter
- cut the squash into half ,remove seeds.
- take all other ingredients,except the cheese and slowly fry until onion is almost soft.
- spoon mixture into hollow of squash, cover with cheese slices and roast on medium heat in preheated oven until squash is soft.Make some cuts into squash and add some butter.
