Tortilla-Chicken Casserole
- 4 chicken breasts OR 1 whole chicken + extra package of thighs
- 12 flour tortillas
- 1 onion, diced
- 1 can diced green chilies
- 1 lb. sharp cheddar cheese, grated
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can evaporated milk
- Paprika
- Cook chicken and tear into small strips when cool.
- Cut tortillas in small strips.
- Mix together the onion and the chilies.
- Mix together the soups and evaporated milk.
- Grease a 9 x 13 inch pan and spread bottom with a layer of soup mixture, then a layer of chicken, onion and chilies, tortilla strips and cheese; continue ending with cheese.
- Sprinkle with paprika and cover with foil.
- Bake at 300u0b0 for 1 hour.
- Serves 12-15.
