Granola Cookies

  1. Preheat oven to 350 degrees.
  2. Grease glass pan with cooking spray.
  3. Grind flax seeds in a blender or coffee grinder.
  4. This will yield about 1/3 cup of flax seed meal.
  5. Combine dry ingredients in a large bowl and mix.
  6. (do not include fillers yet).
  7. Add wet ingredients and mix well with your hands.
  8. You may need to add a little more honey if it doesn't seem to be sticking together.
  9. Add whatever you want to flavor your granola bars.
  10. Suggestions: dried fruit, raisins, nuts, baking chips (chocolate, white chocolate, peanut butter, butterscotch -- ) I usually add chocolate chips and sliced almonds.
  11. Continue to mix well with hands.
  12. Dump mixture into your greased pan and spread out flat.
  13. (If using a 9x13 pan, the mixture will not reach all the sides.
  14. It doesn't really matter as long as it's flat.
  15. The edges just won't be perfect --.
  16. Bake until it's just starting to turn golden on top.
  17. It will be puffy and soft.
  18. This will take 15 - 20 minutes.
  19. Check often, and don't overcook.
  20. Cut while still warm and let cool a few minutes in the pan.
  21. When hard enough to move, place on wire racks to cool completely.
  22. Store in paper bags.
