Potato Wedges With Cilantro Lime Mayonnaise

  1. Put a 4 sides sheet pan in lower third of oven and preheat oven to 450.
  2. Stir cumin, oregano, and 3/4 tsp salt into oil a large bowl.
  3. Add potatoes and toss.
  4. Arrange potatoes, cut sides down, in 1 layer in a hot pan and roast, turning once, until golden, about 40 minutes.
  5. Stir together mayonnaise, sour cream, cilantro, and lime zest and juice, and 1/4 teaspoon salt into small serving bowl.
  6. Serve potatoes with mayonnaise.
