Pumpkin Mousse
- 1 cup canned pumpkin
- 4 JELL-O Vanilla Sugar Free Pudding Snacks
- 3/4 cup COOL WHIP LITE Whipped Topping, thawed
- 1/2 tsp. vanilla extract
- 1/2 tsp. ground cinnamon
- 1/2 tsp. pumpkin pie spice
- 1/4 cup pecans, chopped
- 12 gingersnaps
- 32 fl oz (4 cups) fat-free milk
- MIX pumpkin, pudding, COOL WHIP, vanilla extract, cinnamon and pumkin spice.
- Stir until combined well.
- Divide mixture evenly among 4 bowls.
- Sprinkle each with 1 Tbsp.
- pecans.
- SERVE each bowl of mousse with 3 gingersnaps.
- COMPLEMENT each snack with an 8 fl oz (1 cup) glass of milk.
