Lower Carb Meatloaf

  1. Preheat oven to 350F (175C).
  2. In a small bowl, combine ketchup, 1 tablespoon lemon juice and mustard until smooth.
  3. In a large bowl, combine meat, Oats, onion, egg, bouillon, 1tablespoons lemon juice, and 1/3 cup of the ketchup mixture until well mixed.
  4. Form into a loaf and place in a 9x5 inch loaf pan.
  5. Bake 1 hour.
  6. Pour off fat.
  7. Pour reserved ketchup mixture over loaf.
  8. Bake 10 minutes more.
