Coconut Chicken With Coriander

  1. Heat a wok or frying pan, add a little oil and stir fry onion, garlic and red capsicum for 3 minutes or until onion is soft.
  2. Add chicken in small amounts and stir fry until lightly brown.
  3. Stir in peanut butter, coconut milk, water, sweet chilli sauce and bok choy.
  4. Cook a further 3 minutes or until sauce boils and thickens slightly.
  5. Stir through the coriander and serve with rice or noodles.
