Coconut Chicken With Coriander
- 1 onion, roughly chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, crushed
- 1 red capsicum, sliced into strips Target 1 pkg For $2.99 thru 02/06
- 500g chicken fillets, sliced into strips King Sooper's 1 lb For $1.19 thru 02/09
- 1/3 cup KRAFT Crunchy Peanut Butter
- 200ml coconut milk
- 1/2 - 1 cup water
- 1 tablespoon gluten free sweet chilli sauce
- 1 bunch baby bok choy, trimmed Safeway 1 lb For $1.28 thru 02/09
- 1 tablespoon chopped coriander
- Heat a wok or frying pan, add a little oil and stir fry onion, garlic and red capsicum for 3 minutes or until onion is soft.
- Add chicken in small amounts and stir fry until lightly brown.
- Stir in peanut butter, coconut milk, water, sweet chilli sauce and bok choy.
- Cook a further 3 minutes or until sauce boils and thickens slightly.
- Stir through the coriander and serve with rice or noodles.
