Sheer Khorma
- 2 tablespoons butter or 2 tablespoons margarine
- 2 cardamom pods, grind the seeds
- 12 cup vermicelli
- 4 cups milk
- 1 cup chopped pitted dates
- 14 cup sugar
- 1 teaspoon rose water
- 12 cup chopped pistachios or 12 cup slivered almonds
- 1 edible silver foil (optional)
- Melt butter in a medium saucepan over low heat.
- Add cardamom seeds and stir for 30 seconds.
- Add vermicelli and cook over medium-high heat, stirring constantly for 2-3 minutes or until browned.
- Add milk and dates.
- Cook over medium-low heat for 10 minutes, stirring constantly and skimming foam if necessary, until noodles are tender.
- Add sugar.
- Cook for 1-2 minutes until sugar is completely dissolved.
- Remove from heat and stir in rose water.
- Pour in a bowl and set aside to cool.
- Refrigerate to chill before serving.
- Before serving, garnish with nuts and silver leaf.
