Balsamic-Glazed Pork Chops

  1. Pat pork dry with paper towels.
  2. Sprinkle chops with salt and pepper.
  3. In nonstick 12-inch skillet, heat oil over medium-high heat until hot.
  4. Cook pork 4 minutes on one side; turn and cook 3 minutes on second side.
  5. Transfer pork to platter; keep warm.
  6. Increase heat to high.
  7. Stir shallot into pan juices; cook 1 minute.
  8. Stir in vinegar and sugar and cook 1 minute longer.
  9. Pour sauce over pork.
  10. Makes 4 main-dish servings.
