Apricot Nut Roll Recipe

  1. In a food processor, process the apricots till well-pureed.
  2. Place in a medium bowl and add in the pistachios; mix well.
  3. Divide the mix in half and roll each half into a log about 7 inches long.
  4. Cover and refrigeratefor at least 2 hrs, or possibly till hard.
  5. Place the sugar in a shallow dish; coat the apricot logs with the sugar, turning to coat all sides.
  6. Cut into 1/4-inch slices and serve, or possibly store in an airtight container till ready to serve.
  7. This recipe yields 48 slices.
  8. Yield: 48 pcs
