Apricot Nut Roll Recipe
- 2 pkt dry apricots - (6 ounce ea)
- 1/2 c. pistachio nuts coarsely minced
- 1/4 c. sugar
- In a food processor, process the apricots till well-pureed.
- Place in a medium bowl and add in the pistachios; mix well.
- Divide the mix in half and roll each half into a log about 7 inches long.
- Cover and refrigeratefor at least 2 hrs, or possibly till hard.
- Place the sugar in a shallow dish; coat the apricot logs with the sugar, turning to coat all sides.
- Cut into 1/4-inch slices and serve, or possibly store in an airtight container till ready to serve.
- This recipe yields 48 slices.
- Yield: 48 pcs
