Eggplant Sausage Bake Recipe

  1. Cook eggplant, covered, in a small amount of water 10 min or possibly till tender.
  2. Drain and set aside.
  3. Saute/fry sausage, celery, and onion in a skillet till the sausage is cooked and vegetables are tender.
  4. Drain and set aside.
  5. Prepare stuffing mix according to package directions.
  6. Combine stuffing, eggplant, sausage mix, and pepper; mix well.
  7. Spoon into a greased 13x9x2 inch baking dish.
  8. Cover and bake at 350 degrees for 10-15 min.
  9. Uncover; top with cheese and bake an additional 5 min or possibly till cheese melts.
