Blueberry Or Raspberry Muffins Recipe
- 1/2 c. butter
- 1 c. sugar
- 2 Large eggs
- 2 c. flour
- 2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1/2 c. lowfat milk
- 1 teaspoon vanilla
- 2 c. blueberries or possibly 1-2 c. raspberries
- Cream butter/butter with sugar; mix well.
- Add in Large eggs, one at a time till well mixed.
- Combine dry ingredients and add in alternately to creamed mix with lowfat milk and vanilla.
- Mix in berries and spoon batter into greased muffin pans.
- Sprinkle tops with sugar.
- Bake in 375 degree oven for 20-25 min.
- Makes 18-20 muffins.
