Ham and mushroom salad
- 1 1/2 cup brown mushrooms, sliced
- 2 tbsp low fat or fat free cottage cheese
- 1 cup cherry tomatoes, halved
- 1 cup smoked turkey or lean ham
- 1 cup cucumber, sliced
- 2 cup mixed salad leaves
- 30 ml fresh lemon juice
- 30 ml balsamic vinegar
- 1 ground black pepper
- Slice mushrooms, pan fry till just brown, add any herbs and spices for flavour.
- Leave to cool down.
- Mix mushrooms with cottage cheese.
- Chop cherry tomatoes, turkey/ham & cucumber.
- Mix all ingredients togehter with salad leaves (try using a mix pack with herbs for a more tastey variety).
- Mix lemon juice & balsamic vinegar, use as dressing and season with ground pepper.
