Cream of Garlic Soup

  1. Melt butter.
  2. Add garlic, stirring.
  3. Cook until soft but not brown (2 minutes).
  4. Stir in flour and cook until bubbly.
  5. Slowly stir in broth.
  6. Bring to a boil, stirring often.
  7. Stir in cream and spices.
  8. Do not boil.
  9. Pour off a little of the soup into a bowl.
  10. Mix the egg yolk into the soup in the bowl.
  11. Return the soup to the pot, stirring well.
  12. Serve hot with croutons.
