Blackened Salmon Recipe

  1. To make seasoning mix: Combine paprika, oregano, onion pwdr, garlic pwdr, Cajun seasoning, black pepper, mustard and tarragon.
  2. To make salmon: Remove skin from salmon fillets.
  3. Heat 1/2 c. of the butter.
  4. Coat fillets with butter, and then liberally coat with blackened seasoning mix.
  5. Let stand in refrigerator 1 hour.
  6. Heat large cast-iron skillet till center of skillet turns white.
  7. Place 1 Tbsp.
  8. of butter in skillet, cover immediately with 2 fillets.
  9. Huge amounts of steam and smoke will rise, so don't do this in the house.
  10. Cook 1 to 3 min per side, depending on thickness.
  11. Repeat with remaining 1 Tbsp.
  12. of butter and remaining 2 fillets.
  13. Serve in true Cajun tradition with red beans and rice, a nice baguette and a good solid merlot.
