Chicken Casserole
- 3 or 4 chicken breasts
- 2 c. water
- 3 green onions
- celery tops
- 2 cans cream of chicken soup
- 1 c. uncooked elbow macaroni
- 1 c. Cheddar cheese, shredded
- 1/2 c. cashews (optional)
- 3/4 c. crushed Cheddar cheese crackers
- Simmer chicken in water with onions and celery tops until tender, about 25 minutes.
- Strain broth and save.
- Remove skin from chicken and break meat into chunks.
- Cook macaroni.
- Put into greased 2-quart casserole.
- Sprinkle cheese over macaroni.
- Cover with chicken and sprinkle with cashews.
- Pour soup thinned with 2/3 cup broth over the chicken.
- Top with crushed crackers and bake uncovered at 350u0b0 for 30 minutes or until bubbly.
