Blue-Ribbon Apple Cake

  1. In a mixing bowl, combine flour, 2 cups sugar, baking powder and salt.
  2. Combine eggs, oil, orange juice and vanilla.
  3. Add to flour mixture and mix well.
  4. In a bowl, toss apples with cinnamon and remaining sugar.
  5. Spread a third of the batter into a greased 10 inch tube pan.
  6. Top with 1/2 apples.
  7. Repeat layers.
  8. Carefully spread remaining batter over apples.
  9. Bake at 350F (180C) for 55- 65 minutes or until wooden pick inserted near center comes out clean.
  10. Cool in pan 15 minutes before removing to a wire rack: cool completely.
  11. Dust with confectioners' sugar.
