Red Beans and Greens Salad
- 1 cup chunky prepared salsa, such as chipotle salsa
- 2 tablespoons extra-virgin olive oil, eyeball it
- 1 head escarole, chopped into small bite size pieces
- 1 (14-ounce) can red kidney beans, drained
- 1/2 red onion, chopped
- Salt and pepper
- Combine salad ingredients in a bowl, toss and adjust seasoning.
