Quick Lamb and Apricot Tagine

  1. Heat oil in a large heavy based saucepan.
  2. Add onion and spices and cook until onion has softened.
  3. Add lamb and cook until browned.
  4. Add stock, apricots and Philly* and cook, stirring occasionally, for 10 minutes or until lamb is just cooked through and sauce is smooth and thickened.
  5. Stir in coriander and serve with couscous.
