Lemon-Pepper Yellowfin Tuna
- 1/2 cups Extra Virgin Olive Oil
- 1 whole Lemon, Juice Only
- 1/2 teaspoons Freshly Ground Black Pepper
- 4 whole Yellowfin Tuna Fillets

- Prepare the marinade by combining the olive oil with the lemon juice and pepper in a bowl, whisking until smooth.
- Pour into a gallon-sized plastic bag.

- Rinse the tuna fillets well and gently pat them dry.
- Place them in the bag with the marinade and seal well, removing as much air as possible.
- Squish it around a little to make sure the fish is evenly coated in the marinade, then put in the refrigerator for 30 minutes.

- Every 10 minutes or so, squish the fish around a little to make sure the marinade works its way in and adequately coats the fillets.
- Preheat a grill (a George Foreman grill works well) and season well with olive oil.
- Remove the fillets from their bag and grill them until cooked through, about 1-2 minutes.
- If youre using a regular grill, grill them only a minute on each side.
- If youd like them more well done, add another 2 minutes.
