Lemon-Pepper Yellowfin Tuna

  2. Prepare the marinade by combining the olive oil with the lemon juice and pepper in a bowl, whisking until smooth.
  3. Pour into a gallon-sized plastic bag.

  5. Rinse the tuna fillets well and gently pat them dry.
  6. Place them in the bag with the marinade and seal well, removing as much air as possible.
  7. Squish it around a little to make sure the fish is evenly coated in the marinade, then put in the refrigerator for 30 minutes.

  9. Every 10 minutes or so, squish the fish around a little to make sure the marinade works its way in and adequately coats the fillets.
  10. Preheat a grill (a George Foreman grill works well) and season well with olive oil.
  11. Remove the fillets from their bag and grill them until cooked through, about 1-2 minutes.
  12. If youre using a regular grill, grill them only a minute on each side.
  13. If youd like them more well done, add another 2 minutes.
