Lime Soup
- 1 (3 to 3 1/2 lb.) chicken
- 10 c. water
- 6 peppercorns
- 3 sprigs parsley
- 1 stalk celery
- 1 medium onion
- 2 tsp. salt
- 1/2 tsp. thyme
- 2 Tbsp. oil
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 2 tomatoes (fresh or canned), chopped
- juice of 2 1/2 limes
- 3 Tbsp. coriander or fresh parsley
- Simmer for 1 1/2 hours the first 8 ingredients.
- Remove chicken from bones.
- Strain broth.
- Saute in oil the onion and pepper.
- Add the tomatoes and cook for 5 minutes.
- Add broth and juice of limes. Stir in coriander or parsley.
- Simmer for 20 minutes.
- Add chicken. Heat through.
- Garnish with tortilla chips and lime slices and sprinkle lightly with cheese.
- Makes 3 quarts.
