Chorizo Pizza

  1. Mix biscuit mix, cornmeal, & water together until soft dough forms.
  2. Press into greased pie plate, bringing dough up the sides.
  3. Preheat oven to 425F.
  4. Cook chorizo in skillet until sausage is firm, about 10 minutes.
  5. Drain.
  6. Return to skillet.
  7. Add tomato sauce, salt, & pepper.
  8. Heat to boiling.
  9. Reduce heat.
  10. Simmer uncovered until slightly thickened, 5-7 minutes.
  11. Spread in crust.
  12. Sprinkle with cheese.
  13. Bake until crust is golden brown, 15-18 minutes.
  14. Let set 5 minutes, then serve.
  15. Notes: if you use regular biscuit mix, use half the amount of water.
  16. Note: if you choose you could add onions & Green chilies when you start cooking the meat.
  17. You could also top the whole pizza with olives before putting in oven.
