Carmel Apple Cider Cookies

  1. Preheat oven to 350F Line cookie sheets with parchment paper.
  2. (note: these cookies can and will likely ooze caramel be sure to use parchment so that the caramel doesnt stick to the baking sheet!

  4. In a small bowl, whisk together flour, baking soda, baking powder, and cinnamon.
  5. With an electric mixer, cream together butter, sugar, salt, and all 10 packages of apple cider drink mix powder, until light and fluffy.
  6. Beat in eggs, one at a time.
  7. Add vanilla and mix well.
  8. Gradually add flour mixture to butter/egg mixture.
  9. Mix until just combined.
  10. Scoop out cookie dough ball about the size of 2 Tablespoons.
  11. Flatten the ball of dough in the palm of your hand and press an unwrapped caramel into the center of the dough; seal the dough around it, covering it completely.
  12. Shape the dough into a ball and place on the cookie sheet about 3 inches apart.
  13. Bake 12-14 minutes or until very lightly browned around the edges.
  14. Dont over bake!
  15. Once the cookies are done, carefully slide the parchment off the baking sheet onto the counter.
  16. Allow cookies to partially cool on the parchment and then carefully twist off parchment and allow to finish cooling upside down.
