Skillet Chicken Fajitas
- 1 lb boneless skinless chicken breast (2 breasts)
- 14 yellow pepper
- 14 red pepper
- 14 green pepper
- 1 medium onion
- 2 tablespoons butter or 2 tablespoons margarine
- 2 medium limes
- salt and pepper, to taste
- garlic powder, to taste
- onion powder, to taste
- cilantro, to taste
- dried chipotle chile, to taste
- chili powder, to taste
- chili powder, to taste
- cumin (to taste)
- 6 flour tortillas
- Melt butter in a cast iron skillet on medium heat.
- Slice chicken breast into 1/2" strips and throw in the skillet; add the juice of one lime.
- Season to taste.
- Slice veggies into thin strips and throw into the skillet.
- Stir everything and re-season if desired.
- Add second lime's juice.
- Cook for three to five minutes, then cover and put on low heat.
- Heat flour tortillas and put chicken and veggies inside for a fabulous taco!
