Best Ever Brussels Sprouts Recipe

  1. Trim stem ends off sprouts; remove tough outer leaves.
  2. Halve sprouts lengthwise; cut into strips.
  3. Heat oil and butter together in a heavy pot.
  4. Add in bacon; cook over medium-low heat till it renders the fat and turns golden brown, about 5 min.
  5. If you like, drain some fat.
  6. (If you cannot find lean slab bacon, cut down on the quantity of bacon and drain off most of the drippings.)
  7. Add in carrots and stir to coat with fat.
  8. Cook, stirring often, till carrots begin to soften, about 5 min.
  9. Add in sliced sprouts; toss well.
  10. Cook, stirring, till they are crisp-tender, 5 min.
  11. Sprinkle with onion tops and serve.
  12. Yield: 4 to 6 servings.
