Layered Reuben Salad
- 2 c. finely shredded cabbage
- 2 c. finely shredded lettuce
- 1 (8 oz.) bottle Thousand Island salad dressing
- 1 tsp. caraway seed
- 2 (3 oz.) pkg. sliced corned beef, chopped
- 3 hard-cooked eggs, sliced
- 1 c. shredded Swiss cheese (4 oz.)
- 4 slices Melba toast, coarsely crushed
- In a mixing bowl, combine cabbage, lettuce, 1/4 cup Thousand Island dressing and caraway seed.
- In the bottom of a medium bowl or an 8 x 8 x 2-inch dish, place half of the cabbage mixture. Layer in the following order:
- half of the corned beef, remaining cabbage mixture, remaining corned beef, hard-cooked egg slices and cheese. Spread remaining Thousand Island salad dressing evenly over top of salad.
- Cover tightly with clear plastic wrap. Chill up to 24 hours.
- Before serving, top with crushed Melba toast. Makes 4 main dish servings.
