E-Z Lasagne
- 1 pkg. uncooked lasagne noodles
- 1 lb. Mozzarella cheese, grated or thin sliced
- 1 large carton low-fat large curd cottage cheese
- 3 pkg. spaghetti sauce mix
- 3 (8 oz.) cans tomato sauce
- 4 1/2 c. water
- 1 1/2 lb. lean ground beef
- 1 can chopped olives
- dried Parmesan cheese
- In large saucepan, blend sauce mix, tomato sauce, water and olives.
- Bring to boil on medium-high, then cover and simmer about 20 minutes.
- Brown ground beef; drain and add to sauce.
- Heat oven to 350u0b0.
- In large baking pan (about 12 x 16-inch, with nonstick finish), pour thin layer of meat sauce.
- Next, layer lasagne noodles.
- Spread layer of cottage cheese on noodles, then a good layer of Mozzarella and finally, another layer of meat sauce. Repeat these layers until pan is full, then cover tightly with foil and bake for about one hour.
- Remove from oven and (preferably), let sit for 30 minutes.
- (Of course, this is absolutely best the next day, covered with Parmesan!)
