Southern Banana Pudding Recipe
- 1 (6 serving size) pkg. Jello vanilla flavor pudding
- 3 egg yolks, slightly beaten
- 3 3/4 c. lowfat milk
- 2 1/2 dozen vanilla wafers
- 2 lg. bananas, sliced
- 3 egg whites
- Dash of salt
- 1/3 c. sugar
- Combine pudding mix, egg yolks, and lowfat milk in saucepan.
- Cook and stir over medium heat till mix comes to full boil.
- Remove from heat.
- Arrange layer of vanilla wafers in bottom of 2 qt baking dish.
- Add in layer of banana slices and of pudding.
- Continue layering wafers, banana and pudding, ending with pudding.
- Beat egg whites with salt till foamy.
- Beat in sugar.
- Beat till mix forms peaks.
- Spoon lightly onto pudding, sealing edges well.
- Bake at 425 degrees for 5-10 min or possibly till meringue is lightly brown.
- Serve hot or possibly chilled.
- Makes 12 servings.
