Veal Supreme Recipe
- 3 1/2 pound veal scallopini
- 2 pound mushrooms, sliced
- 3 cartons (1/2 pt.) heavy cream
- 6-7 tomatoes, peeled & cut into wedges
- Parmesan cheese
- Coat veal with seasoned flour.
- Brown in butter; transfer to casserole, salt and pepper to taste and lightly sprinkle with paprika.
- Saute/fry mushrooms, salt and pepper.
- Place on top of veal.
- Pour cream over and arrange tomato wedges around edge.
- Top with Parmesan cheese.
- Bake 30 min at 400 degrees.
- Serves 10.
