Sloppy Joes

  1. Heat oil in large heavy skillet, such as black iron skillet.
  2. Add garlic and saute briefly.
  3. Add onions and cook about 3 minutes.
  4. Add ground beef and brown.
  5. Pour off excess grease.
  6. Add pickles, chili powder, oregano, thyme, vinegar and pickle juice and stir.
  7. Adjust seasonings to taste (I like a lot of thyme).
  8. Add crushed tomatoes, water, ketchup and salt and pepper.
  9. Simmer about 20 minutes until excess liquid has evaporated.
  10. Serve on hamburger buns.
