Caribbean Jerk Chicken Skewers
- 1 env. GOOD SEASONS Italian Dressing Mix
- 2 Tbsp. brown sugar
- 2 Tbsp. oil
- 2 Tbsp. soy sauce
- 1 tsp. ground cinnamon
- 1 tsp. ground thyme
- 1/2 tsp. ground red pepper (cayenne)
- 1-1/2 lb. boneless skinless chicken breasts, cut into chunks
- 3 medium red or green bell peppers, cut into 1-1/2-inch pieces Target 1 pkg For $2.99 thru 02/06
- 1 medium fresh pineapple, cut into 1-1/2-inch chunks
- Mix dressing mix, brown sugar, oil, soy sauce and seasonings until well blended.
- Pour into large resealable plastic bag.
- Add chicken; seal bag.
- Turn bag over several times to evenly coat chicken.
- Refrigerate 30 min.
- to marinate.
- Remove chicken from marinade; discard bag and marinade.
- Preheat grill to medium-high heat.
- Thread chicken, red bell peppers and pineapple alternately onto 12 skewers.
- Place on grate of grill.
- Grill 15 min.
- or until chicken is cooked through, turning frequently.
