Avocado Crostini
- 1/3 baguette, cut diagonally into 12 x 1cm thick slices
- Olive oil spray
- 1 avocado Target 10 ea For $10.00 thru 02/06
- 2 teaspoons lemon or lime juice
- 1 tablespoon chopped parsley
- Freshly ground black pepper, to taste
- 1 - 1 1/2 tablespoons MY FIRST VEGEMITE
- SPRAY both sides of bread with oil.
- Place on a baking tray and bake in a hot oven 200oC for 10 minutes or until golden, turning once.
- SCOOP the avocado flesh into a bowl with juice and coarsely mash with a fork.
- Stir in parsley and season to taste.
- SPREAD toast with MY FIRST VEGEMITE then top with some avocado.
- Serve immediately.
- VARIATION: Try chopped ripe tomatoes, seasoned, in place of the avocado.
