Avocado Crostini

  1. SPRAY both sides of bread with oil.
  2. Place on a baking tray and bake in a hot oven 200oC for 10 minutes or until golden, turning once.
  3. SCOOP the avocado flesh into a bowl with juice and coarsely mash with a fork.
  4. Stir in parsley and season to taste.
  5. SPREAD toast with MY FIRST VEGEMITE then top with some avocado.
  6. Serve immediately.
  7. VARIATION: Try chopped ripe tomatoes, seasoned, in place of the avocado.
