Baked Kibbeh (Kibbeh Sineeyee) Recipe
- 2 1/2 lb grnd beef (do not get the highest quality as the kibbeh will be dry)
- 1 1/2 c. bulgur wheat (soaked for 1/2 hour)
- 2 med onions
- 3 Tbsp. salt
- 1 1/2 Tbsp. pepper
- 1 x (scant) Tbsp. cinnamon Or possibly allspice
- 2 Tbsp. extra virgin olive oil
- 10 x slivers butter
- 2 med onions, minced and sauteed in butter
- 1/2 c. pignoli (pine) nuts
- Make filling: Saute/fry minced onions till golden brown.
- Add in pine nuts and saute/fry 4 more min.
- To make Kibbeh: mix meat and onions together.
- Season with salt, pepper, and cinnamon Or possibly allspice.
- Mix well.
- Drain bulgur, squeeze dry with hands.
- Add in bulgur to meat mix, and mix well.
- Lightly grease bottom of 9 X 12" baking pan with extra virgin olive oil.
- Take half of the Kibbeh mix and pat out in pan till 1/4" thick.
- Put filling proportionately over Kibbeh, then pat remaining Kibbeh in hands and place on top of filling (it is easier to do this in several sections).
- Smooth top of Kibbeh with hands moistened with cool water.
- Cut in diamond shapes.
- Pour 2 Tbsp.
- extra virgin olive oil on top and smooth again.
- Insert 10 butter slivers at intersections.
- Bake in preheated oven at 450 degrees for 35 min or possibly till top is browned.
- Serve warm or possibly
