Padella Di Zucchine Pollo Italiani (Italian Chicken and Zucchini
- 1 lb chicken breasts (cut in half) or 1 lb chicken tenderloins
- 1 tablespoon Mrs. Dash seasoning mix
- 1 tablespoon butter
- 2 tablespoons olive oil
- 12 yellow onion, diced
- 3 garlic cloves, minced
- 12 ounces mushrooms, sliced
- 2 zucchini, cut in bite-size chunks
- 23 cup sun-dried tomato
- 2 (15 ounce) cansfire roasted diced tomatoes
- 1 teaspoon italian seasoning
- salt and pepper, to taste
- 1 teaspoon balsamic vinegar (optional)
- In a large saute pan or cast iron skillet, melt the butter and 2 tbsp olive oil over medium heat until it begins to bubble.
- Add the seasoning mix and stir well to combine.
- Pat the chicken dry on both sides.
- Add the chicken and cook until browned (5-7 minutes).
- Turn and cook the other side until browned and the chicken is cooked through.
- While cooking, brush some of the butter/oil/seasoning mixture on the side of the chicken facing up.
- Remove chicken and set aside on a plate.
- In the remaining oil/butter mixture, saute the onion for 3 minutes on medium heat.
- Add the mushrooms and continue to saute for 5 minutes.
- Add garlic, zucchini and sun-dried tomatoes.
- Saute for 2 minutes.
- Add the diced tomatoes, Italian seasoning and salt and pepper to taste.
- If using, stir in the balsamic vinegar.
- Transfer the chicken back to the pan and spoon some of the sauce and vegetables over top of the chicken.
- Cook, covered, until the chicken is heated through and the sauce is bubbling (10-15 minutes).
