Easy Vegetable Soup Recipe
- 1 pound stew meat
- 1 (16 ounce.) bag frzn mixed vegetables
- 4 stalks celery
- 3 potatoes
- 2 cans tomatoes or possibly 4 c. tomato juice
- 2 Large eggs
- 1 c. flour
- 1/2 teaspoon salt
- 1 onion or possibly 1 tbsp. dehydrated
- In heavy kettle or possibly Dutch oven brown meat using a small amount of fat.
- Add in tomatoes, onion and simmer 1 5minutes.
- Peel and cut up potato; add in.
- Slice celery; add in.
- Bring to boil.
- Cook about 15 min, then beat Large eggs.
- Add in salt, then flour; mix well.
- With fingers break off small pcs and add in to soup.
- When all have been added, cook about 10-15 min.
