Reuben Dip
- 1 pound Sliced Corn Beef From The Deli
- 1 can (15 Oz. Size) Sauerkraut
- 2 cups Shredded Swiss Cheese
- 1/2 cups Mayonnaise
- 1/4 cups Sour Cream
- 2 Tablespoons Cocktail Sauce
- 2 Tablespoons Pickle Relish
- 1/2 teaspoons Minced Garlic
- Finely dice corned beef and place in the bottom of a 9 x 13 inch dish that has been sprayed with cooking spray.
- Top with the well-drained sauerkraut, and then the Swiss cheese.
- In a small bowl, mix the mayo, sour cream, cocktail sauce, pickle relish and garlic.
- Spread evenly over the Swiss cheese in the dish.
- Bake at 325 degrees F for 20-25 minutes.
- Serve with pumpernickel or rye bread squares.
- Note: You can also make this a meal.
- Cube about 8 slices of pumpernickel or rye bread and mix with 1/2 cup melted butter.
- Place on top of the mayo mixture.
- Bake at 350 degrees F for about 30 minutes.
- You now have a Reuben casserole!
