Citrus-Rubbed Veal Chops with Sunshine Salsa

  1. In medium bowl, combine salsa ingredients.
  2. Cover and refrigerate until serving time.
  3. In small bowl, combine salt and lime peel.
  4. Rub into both sides of veal chops.
  5. Place chops on grid over medium, ash-covered coals.
  6. Grill, uncovered, 12 to 14 minutes until veal is medium doneness, turning occasionally.
  7. Serve chops with salsa.
  8. Garnish with mint sprigs.
