Chicken Italiano
- 1 Tbsp. olive oil
- 1/2 lb. fresh mushrooms, sliced
- 1/2 c. onion, chopped
- 2 cloves garlic, minced
- 6 boneless chicken breast halves, skinned
- 2/3 c. dry white wine or fat-free chicken broth
- 3/4 tsp. Italian seasoning
- 1/4 tsp. basil
- 1 c. spaghetti sauce
- 1/4 tsp. red pepper flakes
- grated Parmesan cheese
- In a 3-quart casserole, place oil, mushrooms, onion and garlic.
- Microwave at High (10) for 2 to 4 minutes until tender. Add chicken.
- Microwave at High (10) for 6 to 8 minutes.
- Turn over.
- Add wine or chicken broth, Italian seasoning and basil. Microwave at Medium (5) for 5 to 8 minutes.
- Spread spaghetti sauce over chicken and sprinkle with Parmesan and red pepper flakes.
- Bake at 350u0b0 for 20 to 30 minutes.
