Vegetarian Cajun Gumbo

  1. Preheat oven to 400 degrees.
  2. Place rice in a large roasting pan or casserole dish and pour stock over it.
  3. Combine remaining ingredients and place over rice in the roasting pan.
  4. Cover and cook for one hour.
  5. Uncover and stir.
  6. Replace cover and cook an additional 30 minutes.
  7. Stir and check to see rice if rice is done.
  8. If necessary, cook for another 30 minutes or until rice is tender and liquid is absorbed.
