Dot's Pumpkin Ice Cream Pie Recipe
- 1 baked pie crust (regular or possibly graham)
- 1 pt. softened vanilla ice cream
- 1 pound can pumpkin
- 1 1/2 c. sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 c. whipping cream, whipped
- 1/2 teaspoon salt
- 1/2 teaspoon ginger
- 1 teaspoon vanilla
- Spread softened ice cream in crusts and freeze.
- Mix pumpkin with spices, vanilla, and mix in whipped cream.
- Spoon over frzn ice cream.
- Freeze uncovered till set.
- Cover with foil and freeze hard.
- Serve with whipped topping and sugared almond slivers.
- Makes 2 small pies.
